Umbrian Lentils from Colfiorito

These lentils hail from Colfiorito, the high plain that spans Umbria and Marche, an area famous for its high quality lentils.
Suggested use:
Saute? 2 oz of pancetta cut into cubes (leave out if vegetarian). Saute? in extra virgin olive oil (preferably Umbrian) one sliced yellow onion and one crushed clove of garlic. Remove the garlic after sauteing for about 5 minutes. Add 1/2 cup of simple tomato sauce (or canned tomatoes), 1-2 stalks coarsely sliced celery, one cup of broth (stock or bouillon), and the lentils. Salt and pepper to taste. Add sufficient water for desired consistency, bring to a boil. Simmer over low flame for about 30 minutes and serve as a side dish for sausage or pork chops.
